Challerhocker is a dense, firm Swiss cheese known for its rich, nutty, and buttery flavor, with notes of roasted peanuts, caramel, and browned butter, often with a savory, slightly funky finish. Its name means "sitting in the cellar," referring to its aging process where it's washed in a brine of wine and spices for at least 10 months, developing a tacky rind and a smooth, creamy texture. Created by cheesemaker Walter Rass, it's a more flavorful take on traditional Swiss cheese, perfect for melting in fondue or enjoying on a cheese board.
